Brazilian Vinaigrette

This salsa is typically served with Brazilian Barbecue or on top of any meat (chicken, fish, sausage…). It is also great on top of the rice or as a side dish.

Ingredients:
1/2 cup of diced onion (red or white)
2 or 3 diced tomatoes (leave the peel but remove the seeds)
1/2 cup of olive oil
1/4 cup of white wine vinegar
1/4 cup of yellow or green pepper (optional)
1/4 cup of water 
                                        A pinch of salt and herbs (at your taste)
Directions:
In a bowl, whisk together the salt, water, vinegar and olive oil. Mix well (thorough blending and good ingredients are the key to success for this recipe).

Add the diced onions, yellow or green pepper and  the tomatoes. Flavor as you fit by tossing some fresh herbs (in our recipe we have used parsley, chives and some basil).  Let stand for 30 min before serving. 

Yield: 08 servings (1/2 cups)

Tip: If you are not using the salsa right away, add salt to it right before serving (so that the tomatoes do not get dehydrated if let for long time), cover and refrigerate.

Guava Mousse

To prepare this simple and delicious desert, you will need:

Ingredients:
2 bags of 100g of guava pulp
1/2 cup of condensed milk
1/2 cup of thick cream (you can also use evaporate milk)
1 sachet of unflavoured gelatine **

Directions:
Put 5 tablespoons (or 50 ml) of water in a cup and sprinkle the gelatine powder. Mix well and take it to the microwave for 15 seconds. Let it rest for 2 minutes. 

Add the guava pulp, the condensed milk, the thick cream and the prepared gelatine together and blend for 1 minute. Pour in desert glasses and refrigerate for 3 hours. 

Yield: 04 servings (cups)

Tip: You can replace the guava pulp by other Brazil Village fruit products. Try it with our choices of Passion Fruit, Soursop, Mango…and many others.

** Using the entire gelatine sachet will give the mousse a more firm consistency. It can be prepared and consumed a few days later (keep it well chilled).

Papaya Cream

This tasty dessert is very popular and served at most restaurants.  It is especially refreshing and delicious in the summer. Here is what you need to prepare one of the best deserts in the world:

Ingredients:  
1 bag of 100g of papaya pulp  
2 scoops good quality vanilla ice cream
1 1/2 teaspoon Liqueur De Cassis ("creme de cassis") *
1 spring of mint (optional)

Directions: 
Add the papaya pulp and the vanilla ice cream together and blend until nice and smooth. 
Pour in a chilled dessert dish or glass and add 1 1/2 teaspoon cassis cream liqueur on top. 

Serve immediately. You can choose 1 sprig of mint for garnish. * If you prefer not to use alcohol in a recipe then you can use the black currant syrup or black currant jam to substitute the liqueur.
