
This salsa is typically served with Brazilian Barbecue or on top of any meat (chicken, fish, sausage…). It is also great on top of the rice or as a side dish.
Ingredients:
1/2 cup of diced onion (red or white)
2 or 3 diced tomatoes (leave the peel but remove the seeds)
1/2 cup of olive oil
1/4 cup of white wine vinegar
1/4 cup of yellow or green pepper (optional)
1/4 cup of water
A pinch of salt and herbs (at your taste)
Directions:
In a bowl, whisk together the salt, water, vinegar and olive oil. Mix well (thorough blending and good ingredients are the key to success for this recipe).
Add the diced onions, yellow or green pepper and the tomatoes. Flavor as you fit by tossing some fresh herbs (in our recipe we have used parsley, chives and some basil). Let stand for 30 min before serving.
Yield: 08 servings (1/2 cups)
Tip: If you are not using the salsa right away, add salt to it right before serving (so that the tomatoes do not get dehydrated if let for long time), cover and refrigerate.
